“It’s a no brainer, we just have to eat more veg!!!”

I know I’m preaching to the converted, but I wanted to share how excited I was to hear that Hugh Fearnley-Whittingstall is starting a new series on Channel 4 Sunday 8pm, discussing that we eat too much meat and should eat more vegetables instead. We know!
I’m expecting to see some great seasonal recipes and hope to share them with you. Whilst browsing the River Cottage website I came across a few good ideas; the first one is a simple Hot New Potato Salad, combining our lovely spuds with bacon and parsley really does give them a whole new lease of life. The other one that I tried is a Roast Tomato Sauce, which I used to drizzle over a tray of cubed aubergine and courgette before roasting with whole garlic cloves and sliced red onion; a wonderful supper for a cold Autumn night. The great thing about this sauce is that you can make a large quantity and then use it as an accompaniment to fish or with pasta.
And if you didn’t want to eat the aubergine and were feeling artistic, you could follow in the footsteps of my niece who won the Rawes Shield at the Westmorland Horticultural Society Show this year for the best animal exhibit. Her aubergine penguin was triumphant!!!
