In a pickle
By Catherine Lee, 22 August 2012 –
After spending the weekend camping in Yorkshire and living off BBQ’d food, I was ready to return home and get stuck into the jolly green bag.
This week, despite being in the throes of summer, I found some asparagus and decided to make a Spring Salad, using the broad beans and French beans. Not knowing what nigella seeds were, I once again engaged the services of the internet and after not being able to find any to buy (easily), substituted them for cumin seeds. I was very happy with the outcome, whether they were a good stand-in or not, they added a very nice flavour to this cooked salad.
Then, my quest for a new chard recipe brought me to another of Yotam Ottolenghi’s recipes, Chard & Saffron Omelettes made a lovely meal, and although the recipe asks for waxy potatoes I used the new potatoes from the cropshare. Not being an expert on what’s waxy and what’s not, I thought it made a very nice supper. The question is, are there any more chard recipes out there?
And last, but not least, after neglecting the cucumbers for weeks, I though I ought to post a recipe. My reluctance is not because I dislike them, quite the opposite, I'm always thrilled to find them in my bag and they get used up very quickly in salads. However, the BBQ gave me an idea, Pickled Cucumber turns out to be a very nice addition to any burger.
