I found some lovely sweet garden peas this week, not in my garden, but nevertheless teamed them up with the broad beans to make Risotto with Peas & Broad Beans; it’s an easy recipe requiring just a little bit of patience for 20mins whilst you add the stock. Still in the pursuit of every which way to use the broad beans, I then combined them with the new potatoes to make a Creamy Potato Salad with Broad Beans which went down a treat today in my pack lunch.
As I’m constantly searching for different salad recipes for those pack lunches, the Warm Chickpea, Pepper & Spinach Salad worked really well; the freshness of the spinach, the flavoursome pepper and the substantial chickpeas kept me going until the evening.
And not wanting to waste a single thing in the kitchen, I had a few sweet potatoes left over and found a very simple recipe for Spinach & Sweet Potato Curry; I know the hard-core amongst you won’t approve of a ready-made paste, but sometimes hunger and impatience prevail...
