Cool as a cucumber

I’ve been enjoying the wonderful supply of cucumbers in salads this summer, but with a few in the bag this week I decided to try some recipes with them. As cucumbers are originally from India I thought I’d start with a Cucumber & Mint Raita; a cool, fresh chutney that only takes a few minutes to make and can be used to top fiery curries or as a dip for poppadoms.
I've always been a bit suspicious of cucumber soup, the thought of it has never appealed to me and so I’ve managed to avoid it most of my life. Late Summer Cucumber Soup seemed like a good place to start, and I must admit to being pleasantly surprised. I served it hot as the weather is quite chilly at the moment but it can be served very cold in chilled soup bowls on a hot day.
Whilst looking for some nice salad recipes I came across a website dedicated solely to cucumbers, www.cucumberrecipes.co.uk, who would have thought? The one that made the final cut was Creamy Blue Cheese & Cucumber Salad, the cool cucumber and strong cheese providing a nice contrast of flavours.
I’ve thoroughly enjoyed my week of cucumber recipes.
