Potatoes. Feast, not famine.

What do you say to an angry bag of new potatoes?  Anything, just butter them up!

This week I realized I was building up quite a stock of potatoes, so decided to try a variety of recipes to use them in different ways.  I often find that I’m a little put off by recipes with huge lists of ingredients, so Crunchy New potatoes was a perfect one to start with, very simple and extremely tasty.

Garlic and Sage Crispy Crushed New Potatoes was another simple dish, again calling for the potatoes to be slightly crushed, thereby soaking up the lovely flavours better.

Warm Lemon and Chive Potato Salad; an easy recipe with the great flavours coming from frying some pancetta then coating it all in a dressing made from lemon, chives, olive oil & mustard.

The final idea, Potatoes en Papillotte with Thyme and Garlic, a simple list of ingredients with a small effort going into making the parcels; well worth the trouble when you open them up and a beautiful aroma escapes.

    I love potatoes so thank you Catherine for some great ideas. Last night I boiled a sweet potato with my crop share new potatoes and crushed them gently with lots of black pepper, a good knob of butter and a sprinkling of our lovely parsley. Yum!
