Feta & Broad Bean Salad

It looks like broad beans are coming in our very first share.  This was a recipe idea from Prue Leith's excellent Vegetable Bible.  Just one way to enjoy those beans.  Feel free to send us other ideas to share.

You'll need: 450g podded broad beans, 2 tbsps virgin olive oil, 1 tbsp lemon juice, 2 tbsps mint leaves—chopped, 750g Feta cheese—broken into cubes

1. Boil the broad beans for 6mins, cool off in water, pop beans out of the skins

2. Stir all the ingredients together, taking care not to break up the Feta any further.  

Couldn't really be simpler.  So delicious.
