Freezing parsley for later

Freezing parsley in cubes

Pauline (who does LOTS of wonderful cooking) has suggested an idea for freezing parsley cubes that makes them so easy to add to a soup / sauce / recipe later.  Simple wash and chop the parsley as if you were about to use it.  Mix in a little bit of water and fill an ice cube tray with little individual parcels of it to pop out one by one when you need them.

The other alternative is to simply wash and chop the parsley and freeze small amounts (whatever you would think of as a "portion")  in little freezer bags.  Pauline assures me it's an excellent way to keep it and makes it so easy to use later.
