Parsley, Red Onion and Radish Salad

We got a lovely message from Heather and Alan this week!

As new members, we're finding that the Crop Share is a great way to give the taste buds something new to think about ...and the Parsley did just that! A Seasonal Salad recipe book gave us some 'guide-lines' with "Parsley, Red Onion and Radish Salad".  We were up-for-it!

Amended by using the normal colour organic onions, we were 'told' to cook them in a little olive oil and leave to cool; slice the radishes into thin strips, pull the parsley leaves from the stalks ...and mix all together.

Dressing made from balsamic vinegar, oil and a little mustard. Great! We even claimed a Parsley herb plant in last week's Share ... to use if the Crop Share bag is sans-Parsley any time
