It’s quick, it’s easy, it’s a god send when more hungry people turn up on site than you’re bargained on…
500g cherry tomatoes
2 tins of tomatoes
4 tbsp tomato puree
6 tbsp apple cider vinegar
2 tbsp tamari*
2 tins of black beans
(optional – you can throw in some greens like spinach too)
salt and pepper
Cook the pasta, while this is cooking, make the sauce by chopping the tomatoes into quarters and putting them in a large pan with the tinned tomatoes, puree, vinegar and tamari and salt and pepper.
Simmer for about 5 minutes. Open the tins of beans, rinse and drain them and then stir them into the sauce (spinach too).
Check the pasta is cooked, stir in the sauce and drizzle olive oil on top if that floats your boat.
*this seems to be a gluten free and vegan kind of version of soy sauce. Soy sauce would therefore probably do if you’re not vegan. Feel free to disagree, I know nothing, and am just a humble typer-upper of recipes/sometime critique.
