Australian Damper Bread

G’day!  An antipodean theme at lunch today!  “Warm and lovely and soft and filling” apparently 🙂


250g Self raising flour or gluten free flour

1/2 tsp sea salt

25g vegan spread

175ml soya milk


Mix the flour with the salt in a large bowl. Add the spread and rub it into the flour with your finger tips (like making crumble).

Stir in the milk to make a soft dough

Turn the dough onto a baking sheet and flatten gently to make a round about 17cm across. Brush lightly with milk.

Bake for 30mins until golden

(for a variation, add nutritional yeast with chives or parsley, or add 1 tbsp golden syrup and 2 tbsp caster sugar)
