Autumnal Sunshine Soup

I missed this unfortunately, but I’m told it was one of the best things we’ve made for a while, and really pretty!

1 medium onion, finely diced

4 cloves of garlic, chopped

1 butternut squash, peeled and diced

1 large (or 2 small) golden beetroot, peeled and diced

1 inch fresh turmeric root*

1 tbsp ground ginger

1 1/2 litres vegetable stock


*I have no idea where this came from.  I’m assuming for most normal people, a teaspoon or so of dried turmeric would probably suffice.

Soften the onion and garlic in a pan with a little oil

WEARING GLOVES unless bright yellow hands are your thing, scrape the peel from the turmeric root using a teaspoon. Chop the root finely or grate using a microplane** and add to pan

Add ginger and cook until aromatic

Add beetroot and squash and cook for 5 mins

Add the stock, cook through

Blend the soup, taste and season if required


**I’m guessing that isn’t a light aircraft, but otherwise not a clue.
