Carrot and Turmeric Soup

It both looked and tasted lovely!

3 tbsp olive oil

1 onion, chopped

2 tsp ground turmeric

1 tbsp root ginger, chopped

2 garlic cloves, chopped

500g carrots, cut into 2cm chunks

400ml vegetable stock

juice of 1 lime

salt and pepper

Place a large pan over a meduim heat and sweat the onion in the olive oil with a pinch of salt for 5mins.

Add the turmeric, ginger and garlic and cook for 1-2 mins, then add the carrots and stock.

Bring it to the boil, then reduce the heat and let it simmer, covered for about 25mins.

Blend the soup (hand blender) until smooth, add the lime juice and eat.
