Cheese and Chive Scones

Obviously not a vegan recipe, clue’s in the name 😉


510g plain flour

generous inch of salt

2 1/4 tsp baking powder

1 tsp english mustard powder

65g unsalted butter

380g strong cheddar

4 1/2 tbsp fresh snipped chives

300ml milk


Sift the flour, salt, baking powder and mustard in a bowl

Rub the butter until the mixture resembles fine breadcrumbs

Grate half the cheese very finely and roughly chop the other half. Stir into the flour mixture with the chopped chives

Gradually add the milk to make a soft but not sticky dough

Turn the dough onto a floured surface and knead lightly. Roll the dough to the thickness of an inch. Use a 6cm/2 1/2inch cutter to cut rounds

Re-roll the off cuts as necessary, you should get about 18 scones

Put the scones onto a floured baking tray and glaze with milk or egg mixture

Bake for 10mins at 220 degrees c until golden brown and risen
