Courgette Rice Salad

One for a courgette glut!

 

2 cups of rice

4 cups of water

2 garlic cloves

4 courgettes cut into chunks

2 tbspn olive oil

1 red onion

zest and juice of 2 limes

2 tbspn chopped mint

salt and pepper to taste

 

Chop the courgettes into 1 inch diced pieces

Chop the red onion and finely chop the garlic cloves

Gently fry the courgette, onion and garlic in olive oil for 5 to 10  mins

Rinse the rice in cold water until it runs clear. Then put 2 cups or rice in with 4 cups of water and add a pinch of salt.

Bring to the boil and simmer for 10 mins with the lid on. Drain and rinse in cold water.

Place the rice in a large bowl, add the courgette mixture, lime juice, zest and season with salt and pepper.
