Easy Tomato Soup

Only just got in there in time for a photograph.  By popular request, here’s the recipe for those tomato soup lovers out there!


2 tbsp olive oil

2 onions chopped coarsely

6 garlic cloves

1 tbsp oregano

2 bay leaves

1 tbsp thyme

1 tbsp basil

salt and pepper

pinch of sugar

2 tins of chopped tomatos

1-2 tbsp tomato puree

500ml vegetable stock

150ml cream or milk


Heat the olive oil and lightly fry the onions for about 15 minutes until soft

Add the garlic, herbs, salt and pepper for seasoning and the pinch of salt, cook for a minute

Add the tomatoes, and pour in the stock and let simmer for 10mins

Puree the soup and add the milk or cream to taste, add further seasoning as required
