Growing Well Dhal

Today’s lunch made me very happy. Primordial soup (with nettles and other foraged stuff like dinosaurs) followed by Dhal followed by vegan chocolate pudding and cinnamon scones. Very happy indeed.  The dhal was particularly marvellous, so here’s the recipe:


1 medium onion

I stick celery

1 handful of wild garlic

200g lentils (we used brown)

1 tin of chickpeas

1 heaped teaspoon each of cumin, coriander, garam marsala, turmeric and black mustard seeds*

*I have a sneaking suspicion that these things just got thrown in, in a devil may care attitude

1/4 tsp cinnamon

pinch of chilli flakes

500ml vegetable stock


So, soften up the onion and celery**

**this does not mean hitting it until it talks, rather putting in a pan and frying for a little bit

Then add your spices and chilli in a carefree manner and fry until aromatic***

***not, as in my house, until your eyes water because you have been a bit too carefree with the chilli.

Rinse and add the lentils, stir and add them to the pan

Add the stock and cook until the lentils are soft and the liquid is absorbed

Add the chickpeas

Taste!  Add more spices if you feel like it!
