Marmalade and Cranberry Flapjack

A pudding at Growing Well – always a treat!  Paddington would approve of this one.

400g rolled oats

150g dried cranberries

225g unsalted butter

125g demarera sugar

150g orange marmalade

finely grated zest of 2 oranges


Melt the butter in a pan and add the sugar, marmalade and zest, slowly bringing to a medium heat. Stir in the oats and cranberries

Grease or line (or both) a 25cm square tin. Spoon in the mixture and pack well into the corners

Heat the oven to 180 c and bake for 25mins until golden and lightly coloured around the edges

Take out of the oven and let cool before cutting up (otherwise it crumbles). Keep under your hat for emergencies.
