Moroccan Couscous Salad

It was really lovely this – beautiful flavours.

1 cup couscous

1 cup water

1 tsp salt

1/2 cup parsley chopped

large handful raisins

4 tsp Ras El Hanout (and I’m thinking this isn’t the Batman baddie)

large handful chopped apricots

1 red pepper chopped

2 tbsp lemon juice

1 tbsp chopped mint

2 tbsp chopped coriander

handful radishes, chopped

2 tbsp olive oil


Boil the water and add it to the couscous, cover with a tea towel or lid and leave for 5 mins

With a fork, loosen the couscous (fluff it up!) and add the Batman nemesis.

Add all the other chopped ingredients and  mix together, along with the olive oil.

So easy, so delicious!
