Mushroom Stroganoff

It is so cold here today, and this was brilliant for lunch – really hearty stuff.  Thank you Kendal People’s cafe for the mushrooms!

1kg mushrooms, wiped and sliced

2 onions peeled and diced

4 garlic cloves, peeled and finely chopped

2 tsp paprika

2 tsp mustard (used English but Dijon is recommended)

juice of 1 lemon

2 x tin coconut milk

bunch parsley

salt and pepper

3 tbsp olive oil


Heat the oil in a large pan and add the onion, garlic and mushrooms – cook for 5 mins

Add the paprika, mustard, lemon and coconut milk, and salt and pepper to taste

Cook for 20-25 minutes until reduced

Add the parsley and extra salt and pepper if required

Serve with rice
