No yeast Focaccia

This went down very nicely yesterday.  I’m still off bread so could only gaze longingly….


235ml water

250g plain flour

2 tsp baking powder

1 tsp salt

1 tbsp olive oil

1/4 tsp cayenne pepper

1 tsp garlic salt

1 1/2 tsp dried basil

Nutritional yeast and/or fresh herbs to top


Pour the water into a bowl. Sift together flour, baking powder and salt.

Add the water, and knead until it forms a ball.

Plop (yes, this is the word used on the recipe I’ve been handed) onto a greased baking tray.  Using oiled fingers spread the dough to a 1cm thickness.

Rub the top of the dough with olive oil and season with cayenne, garlic, salt and basil.

Bake for 20 mins in a hot oven (GM 7 or 220 degrees c), sprinkle with nutritional yeast and/or fresh herbs and bake for a further 5 mins
