Every day we make a soda bread of some variety, here’s a lovely oaty version!
150g porridge oats of oatmeal (and a bit extra to sprinkle on the top before it goes in the oven)
350g plain flour
1 tsp salt
1 tsp sodium bicarb
about 375ml soya milk
about 25ml of cider vinegar
Blitz the oats in a food processor until fine
Transfer to a bowl with the flour, salt and bicarbonate. Mix well
Add vinegar to milk, then introduce this mixture to the dry ingredients (‘how do you do?’)
Fold into a dough, don’t knead – a fairly light touch is best, and don’t worry if the mixture is pretty wet
Tip the dough onto a greased oven tray, press the extra oats into the top of the mixture
Bake for 50-60 mins, checking after 40mins. We sometimes flip the loaf to cook the bottom in our eccentric oven. It’s cooked when it makes a hollow sound when you tap it.
