Parsnip and Chickpea Soup

Fantastically delicious soup in the yurt yesterday.  Well worth recreating in the comfort of your own kitchen!  All measurements are very approximate, but in true Jamie Oliver style, throw it all in with confidence and it will be great!

 

1 medium onion, diced

2-3 tsp turmeric

1 tsp ground coriander

500g parsnips diced

1 medium potato diced

1lt veg stock

1 tim chickpeas drained and rinsed

200ml coconut milk (optional)

 

Gently cook the onions in a pan with a little oil (we used rapeseed)

Add spices and cook for 1-2 mins, add a little water if it’s sticking

Add the parsnips, coat with the spices

Add the stock, potatoes and cook until soft

Blend  with stick blender or food processor

Add chickpeas

Add coconut milk if desired

Taste and season if necessary

Et Voila!
