Pineapple Curry

This was amazing. I heartily recommend it!


2 tins coconut milk

1 tin diced pineapple chunks

5 cloves garlic, minced

2 tbps curry powder

2 tsp ginger

1 tsp chilli powder

1/2 tsp turmeric

2 onions, diced

1 green pepper, chopped

4 carrots, peeled and chopped

coconut or vegetable oil

1 tin chickpeas

3 tbsp red lentils, rinsed

1/4 cup lime juice

1 tbsp soy sauce

Fresh coriander for garnish.


Fry the onions and garlic in coconut or vegetable oil for about 3 mins until lightly golden.

Add the spices and cook for 1 min then add the coconut milk, carrots, peppers, chickpeas and lentils and cook for about 5 mins.

Add the pineapple chunks and cook for another 10 mins or until the lentils are soft.  Add the soy sauce and stir.

Add the lime juice and season to taste. Serve sprinkled with fresh coriander.
