Potato and Wild Garlic Croquettes

Spring is here!  The first of the foraging starting this week, with wild garlic picked in the woods behind our site.  Utterly delicious and very more-ish (says the woman who had four yesterday).  Enjoy!

About 1kg of mashed potato

About 100g of shredded wild garlic leaves

1 dessert spoon nutritional yeast (no, I don’t know what that is either*)

Fine breadcrumbs

A little oil

  1. Boil and mash your potatoes. Season and stir in a dribble of oil
  2. Incorporate the shredded garlic and yeast
  3. Whilst the mash is warm, form it into sausage shapes and coat lightly with breadcrumbs
  4. Colour the crumbs in the frying pan. Keep warm on a tray in a medium oven if making large batches.

We served with a swede, bean and wild garlic casserole.

*hold on – just googled it, apparently it is a: “gluten-free, vegan food with a cheesy, nutty taste, made from primary inactive yeast, without artificial additives or preservatives. These yeast flakes are the ideal condiment to sprinkle on soups, stews, casseroles, toppings, salads and breakfast cereals to enhance flavour” (Engevita – other brands are available 🙂 )
