Potato, Onion and Wild Garlic Soup

Well foraged on Monday!  Quite a light soup for brighter days…

2 Medium Onions, sliced

4 Medium Potatoes, diced

1-1.5lts veg stock

50g Wild Garlic, shredded

Juice and zest of 1 lemon

 

  1. Soften the onions in a little oil for 3 mins
  2. Introduce the potatoes (How do you do?) and cook for another 3 -4 minutes, stirring frequently
  3. Add the stock, and bring to the boil, then simmer until the potatoes are just cooked (about 15-25mins depending on the size they are diced)
  4. Add wild garlic, remove from the heat after 2 minutes, add the lemon zest and juice, and seasoning to taste

We served this with cinnamon soda bread, and smoked paprika and chilli bread.
