It’s like stovies but without the meat!  Very filling on a cold winter day, which most food of Scottish origin is (because it’s quite nippy up north, and even more so when you run round in skirts with no underwear).  Anyway…


600g potatoes, peeled and diced large

400g swede peeled and diced large

75g butter

250g greens – cabbage or kale preferably, sliced

salt and pepper

25g cheese, grated


Cook the potatoes and swede in boiling water until soft, then drain them well and return to the pan.

Heat 50g of butter in a pan and cook the cabbage for a few minutes, until it’s tender (but not too floppy).

Add the cabbage to the potatoes and swede, add the rest of the butter and mash it all together (use a potato masher).

Season to taste, and then put the mixture in an oven dish, top with the cheese and cover (with a lid) and bake on 180c for about 30 minutes, then take the lid off and cook for another 15 minutes until golden brown on top.
