Saag Aloo

Ingredients:

  • 500g potatoes
  • 100g spinach
  • 5 garlic cloves
  • 1 medium onion
  • 1 easpoon of coriander
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp ginger
  • 1 tsp garam masala
  • 1 tsp cayenne pepper or chilli powder
  • 1 Handful of fresh, chopped coriander.

Method:

  1. Cook potatoes in water until soft.
  2. Slice onion and chop garlic.
  3. Fry onion, garlic and spices in oils.
  4. Add potatoes and cool until crispy.
  5. Finish with fresh coriander.
