Spinach and Apricot Salad

This was beautiful, and I’m not that keen on apricots.  I have a feeling that other fruit may be interchangeable!

100g pine nuts lightly toasted

500g bag spinach, washed and torn

125g dried apricots, chopped

For the dressing:

2 tbsp toasted sesame seeds

1 tbsp poppy seeds

100g caster sugar

1/4 tsp paprika

4 tbsp white wine vinegar

4 tbps cider vinegar

8 tbsp extra virgin olive oil


Mix the spinach, apricot and pine nuts

In a separate bowl, whisk together all the ingredients for the dressing

Too together with the spinach just before serving
