Vegan Apple Cake

Great option for those autumnal apple gluts!


300g plain flour

3 tbsp aquafaba (otherwise known as the liquid left over from a tin of chickpeas, and in the vegan world, a miracle ingredient)

1 1/2 tsp baking powder

200g caster sugar

1 tsp cinnamon

85ml vegetable oil

1 tsp vanilla essence

2 tsp white wine vinegar

300ml equal parts soya milk and water

4 large eating apples, peeled, cored and sliced


Oil a baking tin (lining with greaseproof paper is probably not a bad call either, we just never have any).

Sieve the dry ingredients into a mixing bowl (flour, sugar, baking powder, cinnamon)

Whisk the oil, soya milk/water mix, vanilla essence and vinegar together in a jug

Pour the liquid slowly into the flour mixture and stir well. stir in the aquafaba liquid

Place the sliced apple into the bottom of the baking tin and cover with the mixture (which will be like a batter).

bake at 190 degrees for about 35-40 minutes, until a sharp knife or skewer comes out clean if you stick it into the middle of the cake.
