Wild Garlic Croquettes

1kg potatoes, peeled and diced

50g soya spread

100g wild garlic leaves, chopped finely

splash of soya milk

salt and pepper

100g dry breadcrumbs


Preheat the oven to 180 dgrees c (Gas 4)

Cook the potatoes in a large pan of salted boiling water for 15 minutes. Drain and leave the colander to steam dry for 2 mins

Put the potatoes back in the pan and add the soya spread, mash until smooth, and season

Stir in the wild garlic, leave to cool fully and transfer to the fridge until fully cooled

Divide the mixture evenly into 12 sausage shapes

Put the breadcrumbs in a bowl

Dip each of the sausage shapes in the breadcrumbs to coat

Place on a non stick baking tray and bake for about 25 mins until golden
